All American applepie meets classic Kiwi apple shortcake. Big, juicy slices of apple with a warm cinnamon flavour, except it’s not wrapped up in thin pastry – this time around, you’ve got those thick, almost cakey layers of shortcake dough that turn the whole thing into a big warm appley hug
The pastry recipe (and inspiration to make applepie in the first place) comes from Sam but the filling I took from the Edmonds Food for Flatters cookbook
Specifically, an apple lattice pie, blueberry crumb pie, and ginger peach pie. Fresh apples are seasoned with sugar and cinnamon, then topped with a walnut and brown sugar crumb topping before baking
Let me preface this by saying I am NOT an applepie lover. At least I used apples, with fingers crossed the arrival of fall might cool our weather just a little

I think there is nothing more comforting, especially in the winter time, then a nice warm dessert especially when it has Apples and Cinnamon in the mix
With Christmas looming large, my thoughts are turning to putting aside a bit of a stash of edible goodies for Christmas gifts, and I thought Madhur's Apple, Peach & Apricot Chutney would fit the bill perfectly

This was originally an Apple Shortcake recipe but I added the sultanas too - it's a good basic recipe to use when wanting to use different/seasonal fruit
Remove from heat and mix in apples and sugar. Sift dry ingredients into the apple mix. You could also add in ½ cup of sultanas if you like, when you mix the dry ingredients into the apple mix
I could write about the contrast in texture with, perhaps, broken walnut pieces. I’m not sure what else can be said about spiced apple cake that hasn’t been said before
