If you lie this you might like this Asian Slaw. So it needed to be something light but bursting with flavour and withchilli, lime, ginger and soy this salad was always going to hit the spot

There’s something about Asian noodles withpeanut sauce that I find addictive. I have an arsenal of basic Asian ingredients in my pantry, so slapping this together was no effort at all, and damn, does it taste good
I didn't have much of an idea of where I was going with this salad, and like most good things do it simply grew from my desire to make something fresh, fast and healthy
Whisk together peanut butter, honey, soy sauce, lime juice and sriracha in a medium bowl. Add the ginger, garlic and chilli and break up the meat with a wooden spoon. Taste and adjust the seasoning if need be with a little more fish sauce, lime juice, sesame oil or a little pepper
Surimi I guess most of us associates it with crab meat but in Japan surimi can be made out of any seafood that is pulverized to a thick paste and formed into various shapes
So after a few salads like this I feel like I am back on track. There is only goodness in this salad. 1 serve quinoagrated carrotgrated beetrootedamame beansmixed toasted nuts (tasti make a nut fusion blend which I toast in a dry pan with sea salt)finely chopped red onionfinely chopped currantsIt doesn't really need more than a squeeze of lemon juice because it is quite balanced in flavour, but I did add a little bit of olive oil and balsamic vinegrette
