Carrot Cake with a Spiced Maple Cream Cheese Frosting

Ingredients

  • 1 ½ cups brown sugar
  • 1 ¼ cups vegetable oil
  • 3 eggs, preferably free-range organic
  • ½ tsp. vanilla bean paste or
  • 1 tsp vanilla extract
  • 2 ¾ cups plain flour
  • 2 tsp bi-carbonate of soda.
  • 2 tsp ground cinnamon
  • ¼ tsp. ground nutmeg
  • 1 tsp salt
  • 1 cup sultanas
  • 1 cup walnuts, roughly chopped
  • 230 g or
  • 2 ¼ cups or
  • 2 medium sized carrots, grated
  • ½ cup tinned pineapple pieces
  • 500 g full fat Philadelphia cream cheese, room temperature
  • 100 g butter, softened
  • 1 cup soft icing sugar
  • 2 tbsp maple syrup
  • 1 tsp ground cinnamon
  • ¼ tsp. ground nutmeg
  • 1 cup walnuts
  • 8- inch or
  • 20 cm round cake tins with baking paper
  • 18 cm cake tins, however would use
  • 20 cm next time as the cake was quiet high
