Coconut Curry Hoki Bake

  • 1 kg Hoki (2 large fillets)
  • 1 cup of long thread coconut (dessicated/flakes/fresh would work wonderfully well too)
  • 1 cup of coconut flavoured evaporated milk/light coconut milk
  • 2 Tbsp of fish sauce or to taste
  • A thumb of fresh ginger - peeled and grated
  • A thumb of fresh turmeric - peeled and grated/1 tspn dried tumeric
  • A chilli with or without seeds - chopped
  • A clove of garlic chopped/ grated
  • Handful of curry leaves (optional)
  • 1 Tbsp of grated palm sugar/ brown sugar (or more to taste)
  • Rind and juice of lime (you may need two depending on size)
  • Green beans and egg noodles to serve
