Ingredients

  • 6 just to
  • 1 tsp
  • 4 with rice
  • 2-3 cups of chopped vegetables. You can use pretty much anything – eggplant, courgette, potato, carrot, kumara, capsicum, brocolli, peas, beans, corn etc
  • 1 onion
  • 1 clove of garlic
  • 1 tbsp chopped ginger
  • 1 tbsp oil
  • 1/2 tsp chilli powder
  • 12 cardamom pods or one and a half tsp seeds
  • 1 tsp cumin powder
  • 1 tsp crushed coriander seeds or powder
  • 3 whole cloves
  • 1 400 g tin of tomatoes
  • 1 400 g tin of coconut milk (light)
