I wanted to try a soup recipe from Delia Smith's Complete Cookery Course book, and I finally settled for the "Leek, Onion and PotatoSoup" seeing that this is one of Delia's personal favourite
so start with leeks put olive oil in a pot and start to fry leeks to soften not to brown when they just start to soften add bacon, thyme, garlic and bay leaf let mingle with each other until all quite soft add peeled ,washed and cut up potatoes and stir them them thru, then add enough water to just cover them all add salt and pepper and bring to the boil then turn down and let simmer until potatoes are cooked
