  • 3 eggplants sliced into thick rounds
  • 2 cloves of garlic, minced
  • 2 tablespoons of smoked paprika
  • 6 vine-ripened tomatoes
  • handful of fresh mint
  • 1 block of creamy feta
  • 1/4 cup of balsamic vinegar
  • 1/4 cup of olive oil
