Ingredients

  • 4 finely chopped garlic
  • 4 fresh bay leaves
  • 1 tablespoon oil in a casserole over medium heat. Cook 2 chopped onions (I buy frozen bag from the supermarket and save the tears), 2 sliced carrots, 3 stalks sliced celery, 2 teaspoons chopped rosemary leaves, 2 thyme sprigs, 1 tablesoon crushed dried juniper berries, 8 cloves. Cook for 6-8 mins until coloured then add 1 tabelsoon balsamic vinegar. Add 1/2 teaspoon freshly grated nutmeg, 2 tablespoons plain flour cook for a minute, then add reserved cooking liquid, bring to boil, then reduce to simmer for about 30 mins
