Ingredients

  • 100 g dairy
  • 125 ml golden
  • 1 teaspoon baking soda
  • 1 tablespoon rice milk
  • 80 g soft brown sugar
  • 2 eggs, lightly whisked
  • 340 g dried mixed fruit
  • 1 orange 110g gluten-free flour blend (see below)
  • 1 teaspoon mixed spice
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground ginger
  • 1 hour Alternatively, heat in the microwave for
  • 10 minutes on medium until warmed through
  • 600 g fine white rice flour
  • 280 g potato starch
  • 120 g tapioca starch
  • 3 teaspoons xanthan gum or guar gum (ideally half of each)
  • 480 g brown rice flour
  • 270 g buckwheat flour
  • 120 g tapioca flour
  • 130 g ground linseed
  • 350 g fine cornmeal
  • 440 g brown rice flour
  • 210 g gluten
  • 620 g brown rice flour
  • 380 g sorghum flour
