Ingredients

  • 400 g potatoes, peeled and cubed
  • 100 ml milk
  • knob butter plus 10g butter
  • sea salt
  • freshly ground black pepper
  • 2 tsp olive oil
  • 225 g onions, chopped
  • 225 g leeks, thinly sliced
  • 2 garlic cloves, finely chopped
  • 3 large chestnut mushrooms, halved and sliced
  • 198 g frozen peas
  • a handful of fresh parsley, chopped
  • half a tsp dried oregano
  • 2 eggs, lightly beaten
  • 85 ml of vegetable stock
  • 160 g mature Cheddar cheese, grated
  • Salt and freshly ground black pepper.
