It's that time again: Bacon and Egg Pie with Kumara and Caramelized Onions

Ingredients

  • 3-4 sheets of ready made savoury shortcrust / 4-6 pieces of ready made puff pastry (~450g) (My fav is the puff pastry version)
  • 250 g - 400g streaky bacon cut into 1-2cm pieces (use more or less depending on how much you love bacon. I tend to be heavy handed with my bacon)
  • 2 medium sized kumara (aka sweet potato or just use normal potato, but it is best with the sweet potato/kumara)
  • 2 large onion, sliced finely
  • 1 Tablespoon balsamic vinegar
  • 1 Tablespoon of soft brown sugar
  • 2 large ripe tomatoes, sliced (or 1 punnet of cherry tomatoes sliced in half)
  • handful of fresh herbs, chopped roughly: basil, spring onions, parsley, thyme etc.
  • 14 large eggs
  • 3/4 cup milk
  • 3 sheets of ready made savoury shortcrust / puff pasty

  • 2 tsp balsamic vinegar
  • 2 tsp soft brown sugar
  • 1 large ripe tomatoes, sliced (or 1/2 punnet of cherry tomatoes sliced in half)
  • handful of fresh herbs, chopped roughly: basil, spring onions, parsley, thyme etc.
  • 8 large eggs
  • 1/2 cup milk
