Ingredients

  • Lemon Coconut Tarts
  • Makes 6 tarts
  •  
  • For the base
  • 1/2 cup dates, soaked in boiling water for ten minutes, then drained
  • 2 teaspoon chia seeds
  • 1 cup ground almonds
  • 1/4 cup sunflower seeds
  • 1/2 cup cashew nuts
  • 1/2 cup coconut
  • 2 tablespoons melted coconut oil or butter
  • 1 large dessert spoon of honey
  • 2 dessertspoons of coconut oil (or butter)
  • 2 eggs
  • 1/4 cup freshly squeezed lemon juice
  • zest from one lemon
  • 2 dessert spoons coconut cream
