I had oranges and lemons leftover from making my Valencia Orange and lemon Victoria Sponge Cake and some yoghurt that I bought to make a smoothie but never got round to it
I set out to bake a LemonYoghurtCake. It had been suggested on the NZ Cake Decorators Facebook page when one person had asked for a lemon/citrus recipe suitable for covering in fondant
Lemon Raspberry and Yoghurt Roses Cake with Cream Cheese Frosting. In a food processor whiz together the sugar, eggs, lemon juice and zest, oil and yoghurt until combined
This is very similar to a cake my mother always makes, its a family afternoon tea/picnic/quick knock-up cake staple and for me the lemon sugar drizzle on the top really finishes it off
I was always looking for better and better recipes until soon it was ricotta cheese and apricot croissants and mocha bars with an almond glaze and lemon chiffon cake with zesty peach icing
That’s where this lemon and raspberry yoghurt loaf comes in. With all this freshness popping up around the place, it makes sense to begin baking with lighter, brighter flavours – like the undeniably delicious combo of lemon and raspberry
Lemoncake, I thought. Lemon is classic and timeless, a strong, fresh flavour. It’s probably a terrible thing when a decision over a simple, basic, yet elegant cake or a layered, complex and indulgent cake becomes a problematic internal conflict
Mix in the lemon rind. Line cupcake pans with paper liners. The add to the top of the cupcakes. Pour batter into cupcake liners until they are 2/3’s full. Bake for 20 to 25 minutes poke one cupcake with a skewer to check if it is cooked. Lemon Mascarpone. This is one of my favourite of all cakes. You can make your traditional cream cheese icing but I made Lemon Mascarpone icing this time
I have baked lemoncakes before but not one with Cognac or Brandy. In fact I doubled the recipe and baked two loaves of this yummy cake and those who had tasted it, gave a thumbs up
