  • the zest and juice of two large lemons
  • 1 cup low-fat greek yogurt
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 cups self raising flour
  • 1 1/2 cups icing sugar
  • 10 g butter, softened
  • 4 tbs desiccated coconut
  • 3 tbs water
