Ingredients

  • 9 inch pie, but could easily fill
  • 8 individual pie shells
  • 40 mins Cook time
  • 1 cup sugar
  • 2 tbs flour
  • 3 tbs cornflour/cornstarch
  • pinch of salt
  • 1 1/2 cups water
  • 3 large lemons, juiced and zested
  • 30 g butter
  • 4 eggs, separated
  • 3/4 cup caster sugar
  • 1 tsp vanilla essence
  • 1/2 tsp cream of tartar
