Ingredients

  • 2 large eggplants, sliced
  • 1/2 cup flour
  • about 1/4 cup olive oil
  • 1/2 cup grated parmesan
  • 100 g mozzarella sliced in to rounds
  • A large handful fresh basil
  •  
  • for the mince filling
  • 300-400 g premium beef mince (standard size packet)
  • 1 onion, sliced finely
  • 2-3 garlic cloves, sliced finely
  • 1 tsp dried oregano
