Sadly the roasted peaches, turned out to be poached peaches, and since they were already in a vanilla-infused sugar syrup I decided to turn them into a sorbet instead, rather than risk upsetting the sugar-balance of the gelato (sugar doesn't freeze, so playing around with the quantity of sugar will affect how soft or firm your ice cream becomes)
but, hey, it was on the list and, unlike some other recipes on the list, there wasn't anything unseasonal for me required (most other members of the group are in the northern hemisphere, so I'm sometimes out of step with everyone else) and I had everything on hand that I needed except the actual piece of fish
So my ratio of vegetables and "sauce" to pasta was probably considerably more than would be traditional, but I was pleased with the results and you should feel free to adjust quantities to suit your own tastes

This sauce is very versatile and can be used on its own over filled pasta or add mushrooms, carrots, lentils, vegetarian mince and top with cheese for a wonderful spaghetti bolognese or use as a pizza sauce or any other way you’d like
