Quick Dinner - Red Wine & Onion with Bacon & Pasta

Ingredients

  • 500 g Dried Pasta (I used Lumaconi)
  • 1 x large Red Onion, finely chopped
  • 6 x rashers of bacon, chopped up small
  • 3 x gloves of garlic (peeled and crushed)
  • 1 x 400g tin of chopped tomatoes
  • 2 x tbsp olive oil
  • 1 x bunch of fresh chopped parsley (I used flat leaf)
  • Parmesan for sprinkling
  • Freshly ground black pepper
  • I don’t add extra salt because the bacon contains a lot of sodium already.
