  • 2 eggs
  • 1 1/2 - 2 tbsp mayonnaise
  • 6 slices of bread
  • 1. Place the eggs in a large saucepan with cold water and slowly bring to a boil over medium heat. Once boiling, reduce to low heat and simmer gently for 10 minutes Drain eggs and place under cold running water until the eggs are cool, this will avoid the black ring from forming around the egg yolk.
  • 4. Cut off the crusts from the bread slices and cut into half each. Spread on one side of the bread and sandwich with another piece. Serve immediately. If bringing for a picnic, it will be better to separate the bread and egg mayonnaise first, and spread just before eating to prevent bread from going soggy.
