Ingredients

  • 2 kg (4.4lb) Pork shoulder roast
  • 2 cloves garlic
  • 2 tsp sea salt
  • 2 tsp dried rosemary
  • 1 1/2 tsp dried oregano
  • 1 1/2 tsp dried thyme
  • 1/2 tsp rubbed sage
  • 1/4 tsp fresh ground black pepper
  • 1/4 tsp freshly grated nutmeg
  • 1 cup plum sauce
  • 1 cup water
  • or chicken
  • 3 times until the roast is nicely browned
