Ingredients

  • 1 kg (2 1/2 pounds) potatoes, red, gold, or round white or half and half with Kumara (Sweet potatoes)
  • 6 slices Henderson’s middle bacon, cooked then diced
  • 1 medium onion, quartered, sliced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried leaf thyme
  • 1/2 cup grated parmesan cheese
