Ingredients

  • 1 tbsp flour
  • 1 tsp cumin
  • 1 tsp ground cinnamon
  • 1 tsp dried oregano
  • 1/2 tsp dried chili
  • 1 tsp salt
  • 1/2 tsp pepper
  • 1 lamb shoulder
  • 2 tbsp olive oil
  • 3 shallots 6 garlic cloves, crushed and peeled
  • 2 carrots 4 fresh sprigs of rosemary, leaves picked
  • 3-4 bay leaves
  • 1/2 cup white wine
  • 1 cup chicken stock
  • 1 can crushed tomatoes
  • juice and zest of one lemon
  • large handful italian parsley
