Ingredients

  • 400-500 g chopped firm vegetables
  • (pumpkin, sweet potato, yams, parsnip)
  • 1 red chilli
  • 1-1/2 cups cooked chickpeas
  • 1 sachet Asian Home Gourmet Nonya Curry paste

  • 425 ml can coconut cream
  • 1 tablespoon vegetable oil
  • 2 handfuls of fresh baby spinach
  • 1 lime, grated zest & juice
  • bunch fresh coriander
