They offered me a range of delicious choices, and although I was sorely tempted to try out the Warm Salad of Lamb, Asparagus, Spring Onions and Pomegranate Seeds with Lentil and Black Olives or the Rolled Baklava with Orange Syrup and Greek Yoghurt, I eventually set my mind to the Zuchinni, MintandFetaFritters
Zucchini, MintandFetaFritters, courtesy of the Black Dog Cottage Cookbook. I was tempted by the Sweetcorn, Spring Onion, CorianderandFeta Fritter and you can read about them over here at Plum Kitchen, but it was the Zucchini, MintandFeta that won me over
Roughly chop the mintandfeta. handful of fresh mint. With a hint of smoked paprika, the tang of balsamic and the creamy saltiness of feta, this salad will make you plenty of friends
It works without that step, but the fritters are softer and harder to flip successfully. We have just two plants and already I have to beg my Facebook friends for new recipe ideas
There's chilli, mintand lemon from the garden out back and a good handful or two of rocket (arugula) that I had laying around from a shoot that was just begging to be eaten before it wilted any further
Slice and cube the watermelon, feta, and lamb rump into bite-sized pieces, and put into a bowl with the torn mint leaves, toasted bread cubes, and resting juices
The grated courgette/zucchini gives the fritter a wonderful moistness and colour, while the mint adds a fresh bite that compliments the accompanying sweet thai chili sauce and sour cream (or creme fraiche if you are in the Netherlands)

So after a couple of people mentioned to me recently that they had made these frittersand found the batter to be very thick (just add a bit more milk I told them), I thought I should actually make them myself according to the recipe instructions I had given
And it’s a nice, simple recipe to throw together. Corn Fritters are a great lunch time treat. Get the oil really hot before adding the mixture and then leave it for a few minutes before turning and it shouldn’t stick to the pan
This cake is really moist and will keep for days. It is also the perfect solution if you have too many zucchini or if you missed one and it’s turned into a marrow
I've grated them and turned them into Kolokithokeftedes - the courgette fritters, spiked with mintand dill, and served with garlicky tzatziki that I enjoyed so often on my Greek island holidays
