Ginger and feijoa are amazing together, I use this combination for muffins too - so good. I was actually looking for some stewed apple to go with our roast pork, so I grabbed a bag of both apple and feijoa and decided on a crumble for pudding
I intended to make Chelsea Winter’s Apple Pie with Feijoa & Maple however it was a low day for me – winter woes and all that guff so I was looking for an alternative which seemed easier
Next were Anzac biscuits for Daddy's lunches and finally Dutch Apple Cake - which the boys and I had a slice of for afternoon tea - it's been years since I made it - it's so easy and tastes divine
Because we have two Feijoa trees there is always a need to find recipes to use them in and this is one I have adapted from an old apple muffin recipe from my mother
I think I’ve made them with apples and blueberries before. Feijoas might be next. Actually they are all round muffins but I made them in chick moulds for Easter so now they are Easter muffins
I have been making these muffins for years now, usually using stewed or chopped apple. By swapping the apple for figs I created a seasonal variation that was super yummy
I made another batch just yesterday and swapped the pumpkin puree for a mixture of feijoa and mashed banana, they are delicious and I think any sort of fruit would work well
